Cooking Methods
Traditional Stew / Umleqwa Style: Simmer with onions, garlic, tomatoes, and spices over low heat for 2–3 hours until the skin is soft and gelatinous and the meat is tender and falling apart.
Potjie: Layer with vegetables and stock in a potjie pot. Cook low and slow over coals for 2.5–3 hours for a deeply flavoured, traditional result.
Pressure Cooker: Cook under pressure for 45–60 minutes for a quick, tender result without sacrificing flavour.
Broth / Stock Base: Simmer for 3–4 hours to extract maximum collagen and create a rich, golden stock perfect for soups and gravies.
